Spicy Can Opener Soup

Greetings!

My pantry and freezer are getting rather bare. It will be time for a trip to the grocery soon. Yesterday I needed something quick for lunch. My hubby was home; so, it had to be something good. The kiddos are happy with PBJ. I didn't find much to inspire me in the refrigerator. So, I turned to my cupboards.

I found a can of black beans, a can of mexican style corn, and a can of off-brand Rotel tomatoes with chiles.

I put it all in a two quart saucepan and added a little taco seasoning. It was pretty with the red, yellow, and black.

Goodness, it was delicious! It's definitely a keeper for a quick dinner. I served it with grilled cheese sandwiches made with homemade whole wheat bread.

Now, I prefer not to use canned goods often; because, I believe fresh and frozen to be more nutritious. This was a great emergency dinner; I think I'll keep these ingredients on hand just in case!


Spicy Can Opener Soup

1 can black beans
1 can Mexican corn with peppers
1 can Rotel type tomatoes w/chiles
1 package of Taco Seasoning

Mix and simmer 5-10 minutes.

Updated 11/10/13:  My recipe was included in a Gooseberry Patch cookbook!  They called it Spicy Pantry Soup!

  8. This is brilliant, Laura! The black beans, Ro-Tel tomatoes, and taco seasoning I always have in my pantry. Now I'll keep corn as well--this sounds delicious!

      I usually have these canned items, too. That's what makes the recipe so great. Use it up, Wear it Out. Make it do, or Do Without!

      Hubby is still job hunting. It's been over three months now. I'm learning more and more about living by faith.

  9. The soup does sound really good. We love soup so will have to give it a try! TFS! Exciting to be in GBP cookbooks. I have had some published in there. I have been collecting there books since early 90s.
