Easy Peasy Cheater's Supper

I got rave reviews for this dinner. I'm almost embarrassed to say what I made! I was going to take photos; but, we ate it all too fast!


Homemade Garlic Cheese Biscuits

4 c all-purpose flour
2 t salt
3 T baking powder
4 T canola oil
1 1/2 - 1 3/4 c milk
2 T garlic powder
4 oz cheddar cheese, shredded
1 stick butter

Preheat oven to 425. Begin with a large bowl. Sift dry ingredients into bowl. Mix well. Combine milk and oil. Stir into dry ingredients. Add shredded cheese. Stir until combined. Drop by large spoonfuls onto a sprayed cookie sheet. Bake 15 minutes. Brush tops generously with melted butter. Return to oven until lightly golden.
These are so good, you don't have to add any more butter at the table.

Now, here's my don't tell main dish. Canned New England Clam Chowder from Aldi. The family loved it! I served 3 cans to our family of 5. They wanted more; but, it was more than adequate as it was.
So, if you're looking for an easy peasy cheater's supper, you've found it!

  2. I make something similar, but I have never used oil in biscuits. I use the ALDI biscuit/pancake mix, milk and cheddar, then when they are all done baking, I spread them with melted butter mixed with garlic powder. They are "pseudo Red Lobster biscuits", but when we ate there about a year ago, the family informed me that mine were not nearly as good as theirs.
