Chicken, Potatoes and Gravy and Carrots

We made an absolutely delicious dinner tonight; and, it was so easy. We are blessed to own Saladmaster Cookware which makes it possible to cook without added grease or water.

I preheated my electric skillet to 400 degrees. Then I put 4 chicken breasts (w/bones) in the skillet. No oil or spray is needed with Saladmaster. I put the lid on and cooked them for about 20 minutes.

Then, after turning the chicken over, my husband cut up 6-8 potatoes on the number 3 cone. So, you'd have to cut your potatoes up with a knife until they were about a quarter inch thick and about an inch long.

So, anyway, he put the potatoes right on top of the chicken, covered it, turned it down to about 250 and let it cook for another 10 or 15 minutes. When done, he spooned the potatoes into a covered dish. While he deboned the chicken breasts, I made gravy with the bit of broth left in the bottom. Gravy is so good this way without all the extra calories of oil or fat. We added cooked carrots and had a feast.
