Healthy Oatmeal Pancakes

Remember the old story of the pancake that rolled out the door and down the lane? Everybody and their second pup chased the pancake hoping for a bite. My family would definitely have been right in there with the others in hot pursuit of that hot cake. They really like pancakes. I mean a lot. They would have them twice a week if I'd make them. It seems like I always feel a little unsettled in my stomach and have a fuzzy feeling in my head after I eat them. So, I don't make them often. I think that's about to change!

I made a big brunch for the family this morning because everyone was home. Scrambled eggs, sausage patties, and a side of hot pancakes. I was feeling homemakery; so, I tried a variation of my regular pancake recipe. We all prayed; and then, I started serving. We let everyone eat their pancakes as they get them so they'll be hot. As I was serving, I kept hearing comments about how wonderful the pancakes were. I was thinking that they were trying to butter me up and get me to make them more often. Then, I tasted them myself. Wow! I loved them. What's even better, they loved me! I didn't feel ill at all. I just had to share the recipe with you.

Healthy Oatmeal Pancakes
This makes about a dozen pancakes.
Whisk together:
2 eggs, beaten
1 1/2 cups milk
4 T canola oil
2 T honey

In another bowl, combine dry ingredients:
1 cup whole wheat flour (1 1/2 cup if freshly ground)
1 cup oats
1 T baking powder
1 t salt

Mix it all together just until smooth. You may need to adjust the flour if you have just ground it yourself from soft wheat. I used 1 1/2 cups of freshly ground flour. This recipe is just so good for you.

I bake these on my electric skillet set at 350 degrees. I put the lid on after I turned them to help them bake because they're thick. You can also bake them on a griddle as you would other pancakes. Be sure to use cooking spray because the honey makes them stick a bit. Don't try to turn them too soon. Make sure the edges are dry and the middle is starting to bubble.
These are just so tasty, you must try them.
