Tasty Tuesday Pineapple Chicken


I made a rave review dish for Sunday dinner last week- Pineapple Chicken. I wanted something that I could put in my electric skillet so that I could come home to a mostly made dinner. I was faced with plain old boneless skinless chicken breasts. I do a lot of cooking by just opening cupboards and seeing what looks like I can put it together in a new dish. Here's how I made my Pineapple Chicken. The kids liked it so much, they told me to make it a recipe!


Pineapple Chicken
3 lbs boneless skinless chicken breasts, thawed
2 cans of crushed pineapple
1/2 cup brown sugar
You already know it was easy because it only has three ingredients!

Brown the chicken breasts lightly in an electric skillet. I own Saladmaster cookware; so, I don't use oil. If your skillet needs a little oil or cooking spray, you'll need to adapt the recipe a bit. You're not trying to fully cook the chicken, just give it a bit of color.
Meanwhile, mix your crushed pineapple with brown sugar in a bowl. After your chicken is browned, spoon the pineapple mixture over the chicken. Cover and turn the electric skillet down. On my skillet, I set it at 200.

Now, go to church or go about your activities for 2-3 hours. When you get home, you'll have delicious moist chicken. I served this with brown rice.
There are 6 of us. Three adults, two kids who are over 5 foot tall and our little eight year old. This fed us all amply. You can adjust amounts to the size of your family. I used the tall cans of pineapple. You could get by with one if you needed to. I just like things moist and brothy.

  1. It sounds yummy, Laura. We'll have to modify it a bit as we don't buy our chicken so we don't have boneless breasts to just throw in the pan. But it will still be rather simple.
