Easy Morning Breakfast Casserole ~ A Christmas Tradition

Easy Morning Breakfast Casserole
This yummy dish is straight forward and to the point. It’s got a down home flavor my kids really like. Now that my children are grown, and two of them are over six foot tall, I make a double batch and put it in a glass roasting dish to bake.
1 lb. Sausage
6 eggs
2 cups of milk
2 slices of bread
1 cup of shredded cheese
Add some chopped green peppers and chopped onions if you like, we always do!
Brown sausage and drain well. Beat eggs, and add the milk. Gently stir in the shredded cheese, sausage, and torn up bread pieces. This is the time to add the green peppers and onions if you’d like. Put it in 13 x 9 pan which has been sprayed with cooking spray. Refrigerate overnight.
Put it in a cold oven the next morning and Bake at 350 degrees for 45 minutes. Insert a knife in the middle to check doneness. It should come out clean. This is great with salsa.

  5. Christmas Breakfast casserole, I always used to make it for Christmas morning,and then cookies and cinnamon rolls. I used to pad mine out with a few more slices of bread and extra eggs, red chopped bell pepper, onions, and we even liked sliced mushrooms in ours. One year I almost put it in the oven without the eggs in it! I had made if very late that Christmas eve night and forgot the eggs. In the morning when I started to put it in the oven, I thought, "Why is this so sloshy in the pan?" Then it dawned on me that I had left all of the eggs out of it. I then put them in, and the casserole still came out fine. Just in time to have after opening our presents that Christmas morning.

  7. We love a similar recipe but we did not have enough kids home to make it this year but we did have the traditional cinnamon rolls. How could I refuse when a sweet 2 year old grandson asked for 'cin buns'? I am a little late so I wish you a Happy New Year!
